We made some deer jerky, and it tastes just like regular beef jerky. What did we do wrong?

We sliced and steamed the meat to 165 degrees before drying it, and it was soaked for 4 days in a marinade of fresh ginger, sea salt, pepper, brown sugar, ponzu sauce, garlic, onion powder, meat tenderizer, worceshire sauce and cayenne pepper.





The meat was very tender and tasty, but it tastes like beef, not deer. Any thoughts for making a more ';gamey'; jerky? Everyone who tastes it doesn't believe it's deer.We made some deer jerky, and it tastes just like regular beef jerky. What did we do wrong?
I think it was in the seasoning. Don't get me wrong, it sounds delicious but it would easily disguise the gaminess of the venison.We made some deer jerky, and it tastes just like regular beef jerky. What did we do wrong?
why would you want it to taste gamey? yuck. we make bratwurst, summer sausage, kielbasa, jerky and pepperoni out of our deer, bear and elk and we love that it tastes like beef!

The reason it taste like beef is all the spices you used. Try making it 'plain'. Or just use the salt and brown sugar, and or tenderizer. Then the 'gamey' taste will show through more.
I think the marinade covered up the gaminess...


They'll know they've had deer jerky when the trichinella worm shows up in their system.... lol... just kidding.
Overwhelming marinade.
